Ingredients
2 cups heavy cream
1/2 cup whole milk
1/2 cup granulated sugar
1 vanilla bean, split lengthwise
2 1/4 teaspoons powdered gelatin (about one 1/4-oz envelope)
3 tablespoons cold water
Instructions
In a small bowl, sprinkle gelatin over cold water. Let stand 5-10 minutes to bloom.
In a medium saucepan, combine heavy cream, milk, and sugar. Scrape vanilla bean seeds into the pot and add the pod. Heat over medium heat, stirring occasionally, until mixture is hot and sugar dissolves (do not boil).
Remove from heat. Add bloomed gelatin and stir until completely dissolved. Remove vanilla pod (rinse and save for another use).
Strain mixture through a fine-mesh sieve into a large measuring cup or bowl with a spout.
Divide mixture among 4 ramekins or glasses (about 1/2 cup each). Refrigerate until set, at least 4 hours or overnight.
To serve, dip ramekins briefly in hot water, run a knife around edge, and invert onto plates. Or serve directly in glasses.
Tips
For a lighter texture, substitute 1/2 cup of heavy cream with Greek yogurt.
Store covered in the refrigerator for up to 3 days.
