- 1 can (14.5 oz) diced tomatoes
- 1 bunch kale, stems removed and leaves chopped
- 1 can (15 oz) cannellini beans, drained and rinsed
- 4 cups vegetable broth
- 2 cups water
- 1 Parmesan rind (optional)
- 4 cups stale crusty bread, torn into bite-size pieces
- Salt and black pepper to taste
- Grated Parmesan cheese for serving
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add onion, carrots, and celery; cook until softened, about 10 minutes.
- Add garlic and red pepper flakes; cook for 1 minute until fragrant.
- Stir in diced tomatoes and cook for 5 minutes, scraping up any browned bits.
- Add kale and cook until wilted, about 3 minutes.
- Add cannellini beans, vegetable broth, water, and Parmesan rind (if using). Bring to a boil, then reduce heat to low and simmer for 20 minutes.
- Stir in the bread pieces and cook for another 10 minutes, until the bread is very soft and the soup has thickened.
- Season with salt and pepper to taste. Remove Parmesan rind.
- Serve hot, drizzled with extra-virgin olive oil and topped with grated Parmesan cheese.
