Ingredients
3 cups all-purpose flour
1 teaspoon instant yeast
1 teaspoon salt
1 teaspoon sugar
1 cup warm water
2 tablespoons olive oil
1 pound ground beef or lamb
1 large onion, finely chopped
1 green bell pepper, finely chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon black pepper
1/2 cup crumbled feta cheese (optional)
Instructions
In a large bowl, combine flour, yeast, salt, and sugar. Add warm water and olive oil; mix until a dough forms. Knead on a floured surface for 5-7 minutes until smooth. Place in an oiled bowl, cover, and let rise for 1 hour.
While dough rises, prepare filling: In a skillet over medium heat, cook ground meat until browned. Add onion, bell pepper, and garlic; cook until softened. Stir in cumin, paprika, and black pepper. Remove from heat and let cool slightly. If using feta, mix it in.
Preheat oven to 475°F (245°C). Line a baking sheet with parchment paper.
Divide dough into 4 equal pieces. On a floured surface, roll each piece into an oval about 8x6 inches.
Spread one-quarter of the meat mixture down the center of each oval, leaving a 1-inch border at the ends and sides.
Fold the sides of the dough over the filling, pinching the ends to form a boat shape. Leave the center open.
Place pides on the prepared baking sheet. Bake for 15-20 minutes, until golden brown.
Serve hot, optionally with yogurt or lemon wedges.
Tips
For a crispier crust, brush the dough edges with egg wash before baking.
Leftover pide can be reheated in a 350°F oven for 5 minutes.
