Ingredients
4 cups granulated sugar
1 1/4 cups cornstarch
1 teaspoon cream of tartar
4 cups water
1 tablespoon rose water
1/2 teaspoon lemon juice
1 cup shelled pistachios, roughly chopped
1/2 cup confectioners' sugar, for dusting
Instructions
In a large saucepan, whisk together sugar, 1 cup cornstarch, cream of tartar, and water. Bring to a boil over medium-high heat, stirring constantly.
Reduce heat to low and simmer, stirring frequently, for about 40 minutes until the mixture thickens and turns a pale golden color.
Remove from heat and stir in rose water and lemon juice. Fold in pistachios.
Pour the mixture into a 9x9-inch pan lined with parchment paper and lightly oiled. Smooth the top. Let cool completely at room temperature, at least 4 hours or overnight.
In a small bowl, mix remaining 1/4 cup cornstarch and confectioners' sugar. Dust a cutting board with some of the mixture. Turn out the set Turkish delight onto the board. Cut into 1-inch squares using a knife dusted with the mixture.
Toss the pieces in the remaining cornstarch-sugar mixture to coat. Store in an airtight container at room temperature.
Tips
For best texture, allow the Turkish delight to set overnight.
Store between layers of parchment paper to prevent sticking.
Can be flavored with orange blossom water or lemon instead of rose.
