2 cups plain full-fat Greek yogurt
1/4 cup honey, plus more for drizzling
1/2 teaspoon vanilla extract
1 cup dried apricots, finely chopped
1/2 cup water
1 tablespoon lemon juice
1/4 cup chopped walnuts
1 tablespoon pistachios, chopped (optional)
Instructions
In a medium bowl, whisk together the Greek yogurt, honey, and vanilla extract until smooth. Divide the yogurt mixture evenly among 4 serving bowls or glasses.
In a small saucepan, combine the chopped dried apricots, water, and lemon juice. Bring to a simmer over medium heat, then reduce heat to low and cook for 5 minutes, stirring occasionally, until the apricots are plump and the liquid is syrupy. Remove from heat and let cool slightly.
Spoon the cooked apricots and any syrup over the yogurt in each bowl.
Top with chopped walnuts and pistachios (if using). Drizzle with additional honey to taste. Serve immediately or refrigerate until ready to serve.
Tips
For a thicker consistency, use Greek yogurt or strain regular yogurt through cheesecloth for 1 hour.
The apricot topping can be made ahead and stored in the refrigerator for up to 3 days.
