Ingredients
16 dried apricots
8 slices bacon, cut in half crosswise
1 tablespoon olive oil
1 tablespoon lemon juice
1 teaspoon ground cumin
1/2 teaspoon paprika
Salt and pepper to taste
16 short wooden skewers, soaked in water for 30 minutes
Instructions
In a small bowl, mix olive oil, lemon juice, cumin, paprika, salt, and pepper to create a marinade.
Wrap each dried apricot with a half slice of bacon, securing with a toothpick or small skewer. Alternatively, thread onto short skewers, alternating with additional apricots if desired.
Brush the wrapped apricots with the marinade on all sides.
Preheat grill to medium-high heat (about 400°F/200°C).
Grill the kebabs for 8-10 minutes, turning occasionally, until bacon is crispy and browned.
Remove from grill and let rest for 2 minutes before serving.
Tips
Soak wooden skewers for at least 30 minutes to prevent burning.
