Ingredients
2 cups dried apricots (preferably Turkish)
4 cups water
1/2 cup granulated sugar (adjust to taste)
1 tablespoon lemon juice
1 cinnamon stick (optional)
2 whole cloves (optional)
Instructions
Rinse the dried apricots under cold water and drain.
In a medium saucepan, combine apricots, water, sugar, cinnamon stick, and cloves if using. Bring to a boil over medium-high heat.
Reduce heat to low and simmer, uncovered, for 20-25 minutes until apricots are plump and tender, and the liquid has slightly thickened.
Remove from heat. Stir in lemon juice. Discard cinnamon stick and cloves.
Let cool to room temperature, then transfer to a serving bowl or jar. Refrigerate until chilled before serving.
Tips
For a thicker syrup, simmer longer or add a teaspoon of cornstarch mixed with water.
Serve cold with a dollop of kaymak or clotted cream, or alongside baklava.
Store in the refrigerator for up to 1 week.
Adjust sugar to taste depending on the sweetness of the apricots.
