Ingredients
2 tablespoons unsalted butter
1 medium onion, diced
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
1/4 cup all-purpose flour
4 cups turkey or chicken broth
2 cups cooked turkey, shredded
1 cup frozen peas
1 teaspoon dried thyme
1/2 teaspoon dried sage
Salt and black pepper to taste

2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
3 tablespoons unsalted butter, melted
Instructions
In a large pot or Dutch oven, melt 2 tablespoons butter over medium heat. Add onion, carrots, and celery; cook until softened, about 5 minutes. Add garlic and cook 1 minute more.
Sprinkle 1/4 cup flour over vegetables and stir to coat. Cook for 2 minutes, stirring constantly.
Gradually whisk in broth until smooth. Bring to a simmer, then reduce heat to low. Add turkey, peas, thyme, sage, salt, and pepper. Cover and simmer for 15 minutes, stirring occasionally.
Meanwhile, make dumplings: In a medium bowl, whisk together 1 1/2 cups flour, baking powder, and 1/2 teaspoon salt. Add milk and melted butter; stir just until combined (do not overmix).
Drop dumpling batter by rounded tablespoonfuls onto the simmering stew. Cover and cook without lifting the lid for 15 minutes, or until dumplings are cooked through and fluffy.
Serve hot, garnished with fresh parsley if desired.
Tips
For a thicker stew, mash some of the vegetables against the pot before adding dumplings.
