Ingredients
1 can (5 oz) solid white tuna, drained and flaked
3 tablespoons mayonnaise
1 tablespoon finely chopped celery
1 tablespoon finely chopped red onion
1 teaspoon Dijon mustard
1 tablespoon fresh lemon juice
Salt and black pepper to taste
4 slices sourdough bread
2 tablespoons butter, softened
4 slices cheddar cheese (or your preferred melting cheese)
Instructions
In a medium bowl, combine flaked tuna, mayonnaise, celery, red onion, Dijon mustard, lemon juice, salt, and pepper. Mix well.
Spread butter on one side of each bread slice. Place bread buttered side down on a cutting board.
Divide tuna mixture evenly between two slices of bread (unbuttered side up). Top each with 2 slices of cheese. Place remaining bread slices on top, buttered side up.
Heat a non-stick skillet or griddle over medium heat. Place sandwiches in the skillet and cook until golden brown on the bottom, about 3-4 minutes.
Carefully flip sandwiches and cook until the other side is golden brown and cheese is melted, about 3-4 minutes more. Serve hot.
Tips
For extra flavor, add a few slices of tomato or avocado before closing the sandwich.
Serve with pickles or potato chips on the side.
If you prefer open-faced, place tuna mixture on bread, top with cheese, and broil until bubbly.
