Ingredients
1 lb frozen tater tots
1 tbsp vegetable oil
1/2 lb ground beef
1/2 cup chopped onion
2 cloves garlic, minced
1 tbsp chili powder
1 tsp ground cumin
1/2 tsp salt
1 (14.5 oz) can diced tomatoes, undrained
1 (15 oz) can kidney beans, drained and rinsed
1 cup shredded cheddar cheese
2 tbsp chopped fresh cilantro (optional)
Instructions
Preheat oven to 425°F. Spread frozen tater tots in a single layer on a baking sheet. Bake for 20-25 minutes, or until golden and crispy.
Meanwhile, heat oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned, about 5 minutes.
Add onion and garlic; cook until softened, about 3 minutes. Stir in chili powder, cumin, and salt; cook 1 minute.
Add diced tomatoes and kidney beans. Bring to a simmer; reduce heat to low and cook for 10 minutes, stirring occasionally.
Divide hot tater tots among serving plates or a platter. Spoon chili over tots and top with shredded cheese. Sprinkle with cilantro if desired. Serve immediately.
Tips
For extra heat, add a diced jalapeño with the onion.
Substitute ground turkey or vegetarian crumbles for a lighter version.
