Ingredients
1 (32 oz) bag frozen tater tots
1 lb ground beef
1 packet taco seasoning
1/2 cup water
2 cups shredded Mexican blend cheese
1 cup canned black beans, drained and rinsed
1 cup diced tomatoes
1/2 cup sliced black olives
1/4 cup chopped green onions
1/2 cup sour cream
1/2 cup guacamole
1/4 cup pickled jalapeños
Instructions
Preheat oven to 425°F (220°C). Spread tater tots in a single layer on a large baking sheet. Bake for 20-25 minutes until golden and crispy.
While tots bake, brown ground beef in a skillet over medium-high heat, breaking it apart. Drain excess fat. Add taco seasoning and water; simmer until thickened, about 5 minutes.
Remove tots from oven. Top evenly with seasoned beef, black beans, and shredded cheese. Return to oven and bake for 5-7 minutes until cheese is melted and bubbly.
Remove from oven and top with diced tomatoes, black olives, green onions, sour cream, guacamole, and pickled jalapeños. Serve immediately.
Tips
For extra crunch, broil the topped nachos for 1-2 minutes after adding cheese.
