  2. Place tomato quarters in a large pot and crush them slightly with a potato masher or wooden spoon. Bring to a boil over medium-high heat, then reduce heat and simmer for 10 minutes, stirring occasionally.
  3. Pass the cooked tomatoes through a food mill or fine-mesh sieve to remove skins and seeds. Discard solids.
  4. Return the tomato puree to the pot. Add olive oil, salt, and sugar (if using). Stir well.
  5. Cook over very low heat, stirring frequently, until the puree reduces to a thick paste. This can take 1.5 to 2 hours. The paste is ready when it mounds on a spoon and no liquid separates.
  6. Let the paste cool completely. Transfer to a clean jar or airtight container. Store in the refrigerator for up to 2 weeks or freeze for longer storage.
