Ingredients
2 tablespoons vegetable oil
1 large onion, finely chopped
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon turmeric
1 teaspoon chili powder (adjust to taste)
1 (14-ounce) can crushed tomatoes
1 cup water
1 teaspoon salt, or to taste
1/2 teaspoon sugar
1/2 cup heavy cream or coconut milk
2 tablespoons fresh cilantro, chopped
Instructions
Heat oil in a large pot over medium heat. Add onion and cook until soft, about 5 minutes.
Add garlic and ginger; cook for 1 minute until fragrant.
Stir in cumin, coriander, turmeric, and chili powder. Cook for 30 seconds.
Pour in crushed tomatoes and water. Bring to a simmer.
Reduce heat to low, cover, and cook for 20 minutes, stirring occasionally.
Stir in salt, sugar, and cream. Simmer for 5 more minutes.
Taste and adjust seasoning. Garnish with cilantro before serving.
Tips
For a vegan version, substitute heavy cream with coconut milk.
