Ingredients
1 block (14-16 oz) extra-firm tofu, pressed and sliced into 4 slabs
3 tablespoons soy sauce
2 tablespoons rice vinegar
1 tablespoon sesame oil
1 tablespoon maple syrup
1 clove garlic, minced
1 teaspoon grated fresh ginger
2 cups shredded green cabbage
1 cup shredded carrots
2 green onions, thinly sliced
1/4 cup chopped fresh cilantro
2 tablespoons mayonnaise
1 tablespoon sriracha (or to taste)
4 burger buns, toasted
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a shallow dish, whisk together soy sauce, rice vinegar, sesame oil, maple syrup, garlic, and ginger. Add tofu slabs and marinate for 15 minutes, turning once.
Place tofu on prepared baking sheet. Bake for 15 minutes, flip, and bake another 15 minutes until golden and firm.
Meanwhile, make the slaw: In a bowl, combine cabbage, carrots, green onions, and cilantro.
In a small bowl, mix mayonnaise and sriracha. Pour over slaw and toss to coat.
Assemble burgers: Place a tofu slab on each bun bottom, top with slaw, and cover with bun top.
Tips
For extra crispy tofu, press it for 30 minutes before marinating.
Serve with sweet potato fries for a complete meal.
Leftover slaw can be stored in the fridge for up to 2 days.
