Ingredients
4 tilapia fillets (about 6 oz each)
2 tablespoons olive oil
1 onion, thinly sliced
3 cloves garlic, minced
4 Roma tomatoes, diced
1/4 cup green olives, sliced
2 tablespoons capers, drained
2 bay leaves
1 teaspoon dried oregano
1/2 teaspoon ground cumin
Salt and pepper to taste
1/4 cup fresh parsley, chopped
Instructions
Season tilapia fillets with salt and pepper.
Heat olive oil in a large skillet over medium heat. Add onion and cook until soft, about 5 minutes. Add garlic and cook for 1 minute.
Add tomatoes, olives, capers, bay leaves, oregano, and cumin. Cook for 5 minutes, stirring occasionally.
Place tilapia fillets in the skillet, spooning some sauce over them. Reduce heat to low, cover, and simmer for 10-12 minutes, until fish is cooked through.
Remove bay leaves. Garnish with fresh parsley and serve.
Tips
Serve with rice or crusty bread to soak up the sauce.
Can substitute other white fish like snapper or cod.
