1 lb tilapia fillets
1/2 cup all-purpose flour
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp cumin
1/2 tsp chili powder
1/4 cup vegetable oil
8 small corn tortillas
2 cups shredded cabbage
1/4 cup chopped fresh cilantro
1/4 cup sour cream
1 tbsp chipotle peppers in adobo sauce, minced
1 tbsp lime juice
1/2 cup crumbled queso fresco (optional)
Instructions
In a shallow dish, mix flour, salt, pepper, cumin, and chili powder. Pat tilapia fillets dry, then dredge in the flour mixture, shaking off excess.
Heat oil in a large skillet over medium-high heat. Cook tilapia for 3-4 minutes per side, until golden and cooked through. Transfer to a plate and flake into chunks.
In a small bowl, combine sour cream, chipotle peppers, and lime juice to make the sauce.
Warm tortillas in a dry skillet or microwave. Assemble tacos: fill each tortilla with cabbage, fish, cilantro, sauce, and queso fresco if using. Serve immediately.
