Ingredients
1/2 cup soy sauce
1/2 cup mirin
1/4 cup sake
1/4 cup granulated sugar
1 clove garlic, minced
1 teaspoon grated fresh ginger
Instructions
In a small saucepan, combine soy sauce, mirin, sake, sugar, garlic, and ginger.
Bring to a simmer over medium heat, stirring occasionally until sugar dissolves.
Reduce heat to low and simmer gently for 5-7 minutes, until slightly thickened and reduced by about one-third.
Remove from heat and let cool. The glaze will thicken further as it cools.
Tips
Store in an airtight container in the refrigerator for up to 2 weeks.
For a thicker glaze, simmer a few minutes longer or add a cornstarch slurry (1 teaspoon cornstarch mixed with 1 tablespoon water) and stir until thickened.
Use as a marinade (reserve some for basting) or brush onto grilled or pan-seared proteins during the last few minutes of cooking.
