Ingredients
1 lb ground beef
1 tablespoon vegetable oil
1/2 cup soy sauce
1/4 cup mirin
2 tablespoons honey
1 teaspoon grated fresh ginger
2 cloves garlic, minced
1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
1 head butter lettuce or iceberg lettuce, leaves separated
2 green onions, sliced
1 tablespoon sesame seeds (optional)
Instructions
In a small bowl, whisk together soy sauce, mirin, honey, ginger, and garlic. Set aside.
Heat vegetable oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned and cooked through, about 5-7 minutes. Drain excess fat if needed.
Pour the teriyaki sauce over the beef. Bring to a simmer and cook for 2 minutes.
Stir the cornstarch slurry into the beef mixture. Cook, stirring, until the sauce thickens, about 1-2 minutes. Remove from heat.
Spoon the beef mixture into lettuce leaves. Garnish with sliced green onions and sesame seeds if desired. Serve immediately.
Tips
For a spicier kick, add 1 teaspoon sriracha or red pepper flakes to the sauce.
Leftover filling can be stored in the refrigerator for up to 3 days and reheated.
Use large, sturdy lettuce leaves like butter lettuce or romaine hearts for easier wrapping.
