Ingredients
1/2 cup heavy cream
1/4 cup whole milk
2 tablespoons loose black tea (e.g., Earl Grey or Assam)
1/2 cup mascarpone cheese
2 tablespoons powdered sugar
1/2 teaspoon vanilla extract
Pinch of salt
Instructions
In a small saucepan, combine heavy cream and milk. Heat over medium heat until just simmering, then remove from heat.
Add loose tea leaves, stir, and let steep for 5 minutes.
Strain the mixture through a fine-mesh sieve into a bowl, pressing on the tea leaves to extract as much liquid as possible. Discard leaves. Let the infused cream cool to room temperature.
In a medium bowl, whisk mascarpone cheese until smooth. Add powdered sugar, vanilla extract, and salt, and whisk until combined.
Gradually pour the cooled tea-infused cream into the mascarpone mixture, whisking continuously until smooth and well blended.
Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
Tips
For a stronger tea flavor, steep the tea leaves for up to 10 minutes.
Serve with scones, shortbread, or sliced apples.
Store in an airtight container in the refrigerator for up to 3 days.
