A hearty and satisfying breakfast hash made with crispy tater tots, savory sausage, bell peppers, and onions, all topped with melted cheese and a fried egg.

Ingredients
1 lb frozen tater tots
1/2 lb breakfast sausage, casings removed
1 tbsp olive oil
1/2 cup diced onion
1/2 cup diced green bell pepper
1/2 cup diced red bell pepper
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp smoked paprika
1/4 cup shredded cheddar cheese
4 large eggs
Instructions
Preheat oven to 425°F. Spread tater tots on a baking sheet and bake according to package directions until crispy, about 20 minutes.
While tots bake, cook sausage in a large skillet over medium-high heat, breaking it up, until browned, about 5 minutes. Transfer to a plate.
In the same skillet, add olive oil, onion, and bell peppers. Cook until softened, about 5 minutes. Season with salt, pepper, and smoked paprika.
Add cooked sausage back to the skillet and stir to combine. Keep warm.
Once tots are done, add them to the skillet and gently mix with the sausage and vegetables. Sprinkle cheese on top and cover with a lid to melt, about 2 minutes.
In a separate non-stick skillet, fry eggs to your liking (sunny-side up recommended).
Divide hash among plates and top each with a fried egg. Serve immediately.
Tips
For extra crispiness, bake the tater tots a few minutes longer than package directions.
You can substitute the sausage with bacon or ham.
Leftover hash can be stored in the fridge for up to 3 days; reheat in a skillet.
