Ingredients
1 cup plain full-fat yogurt
2 tablespoons lemon juice
1 tablespoon ginger-garlic paste
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon paprika
1/2 teaspoon turmeric
1/2 teaspoon cayenne pepper (adjust to taste)
1/2 teaspoon garam masala
1/2 teaspoon salt
1 tablespoon vegetable oil
Red food coloring (optional, for traditional color)
Instructions
In a medium bowl, whisk together yogurt, lemon juice, ginger-garlic paste, cumin, coriander, paprika, turmeric, cayenne, garam masala, and salt until smooth.
Stir in vegetable oil and red food coloring if using. Mix well.
Use immediately to marinate chicken pieces (about 1.5 lbs), coating evenly. Cover and refrigerate for at least 2 hours, preferably overnight.
Remove chicken from marinade, letting excess drip off, and grill or bake as desired.
