  1. Soak tamarind pulp in warm water for 10 minutes, then strain to extract the juice, discarding seeds and fibers.
  2. In a non-stick pan, combine tamarind juice, jaggery, and water. Cook over medium heat, stirring occasionally, until the mixture thickens and starts to pull away from the sides (about 15 minutes).
  3. Add chili powder, black salt, and roasted cumin powder. Mix well and cook for another 2 minutes.
  4. Grease a plate or silicone mat with ghee. Pour the hot tamarind mixture onto it and spread evenly to about 1/4-inch thickness.
  5. Place lollipop sticks into the mixture, spacing them evenly. Let cool for 5 minutes until firm but pliable.
  6. Cut into rounds using a cookie cutter or knife, shaping around each stick. Allow to cool completely until hard.
  7. Wrap each lollipop in cellophane or wax paper for storage.
