  4. Add chicken broth, cream, salt, pepper, and nutmeg. Bring to a simmer, then reduce heat to low. Cook, partially covered, stirring occasionally, until sauce thickens, about 1 hour.
  5. Meanwhile, cook tagliatelle in salted boiling water until al dente. Reserve 1 cup pasta water, then drain.
  6. Add drained pasta to the ragù and toss over low heat, adding pasta water as needed for a silky sauce. Serve immediately with Parmigiano-Reggiano.
