Ingredients
2 lbs flank or skirt steak
1/2 cup fresh orange juice
1/4 cup fresh lime juice
4 cloves garlic, minced
1/4 cup chopped fresh cilantro
1 tsp ground cumin
1 tsp salt
1/2 tsp black pepper
12 small corn tortillas
1 cup salsa verde or pico de gallo
1 cup guacamole
1/2 cup crumbled queso fresco
Lime wedges for serving
Instructions
In a bowl, combine orange juice, lime juice, garlic, cilantro, cumin, salt, and pepper. Place steak in a dish, pour marinade over, and refrigerate for at least 2 hours or overnight.
Preheat grill or grill pan to high heat. Remove steak from marinade and pat dry. Grill for 4-6 minutes per side for medium-rare, or to desired doneness. Let rest for 5 minutes, then slice against the grain into thin strips.
Warm tortillas on the grill or in a dry skillet for about 30 seconds per side.
Assemble tacos: place steak on tortillas, top with salsa, guacamole, and queso fresco. Serve with lime wedges.
Tips
For best flavor, marinate overnight.
Skirt steak is traditional; flank steak is a good substitute.
