Ingredients
- 1 lb ground beef
- 1 packet (1 oz) taco seasoning
- 1/2 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup frozen corn
- 1 (32 oz) bag frozen tater tots
- 2 cups shredded Mexican blend cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1/4 cup sliced black olives
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a 9x13-inch baking dish.
- In a large skillet over medium-high heat, cook ground beef until browned, breaking it up as it cooks. Drain excess fat.
- Add taco seasoning and water to the skillet. Stir and simmer for 2-3 minutes until thickened.
- Stir in black beans, diced tomatoes, and corn. Cook for 1-2 minutes until heated through.
- Spread the beef mixture evenly in the prepared baking dish. Sprinkle 1 cup of cheese over the top.
- Arrange frozen tater tots in a single layer over the cheese, covering the surface as much as possible.
- Bake for 25 minutes, until tater tots are golden and crispy. Remove from oven and sprinkle remaining 1 cup cheese over the tots.
- Return to oven and bake for 5-10 more minutes, until cheese is melted and bubbly.
- Let stand for 5 minutes. Top with sour cream, green onions, and black olives before serving.
Tips
- For a spicier version, add diced jalapeños or use hot taco seasoning.
- Serve with salsa, guacamole, or hot sauce on the side.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
