Ingredients
1 lb ground beef
1 packet taco seasoning (or 2 tbsp homemade)
1 cup long-grain white rice
2 cups water
1 lime, juiced
1/4 cup fresh cilantro, chopped
1 can (15 oz) black beans, drained and rinsed
1 cup frozen corn kernels, thawed
1 cup cherry tomatoes, halved
1 avocado, diced
1/2 cup sour cream
1/2 cup shredded cheddar cheese
Salt to taste
Instructions
Cook rice according to package directions using 2 cups water. Fluff with fork, then stir in lime juice and cilantro. Set aside.
In a large skillet over medium-high heat, cook ground beef until browned, breaking it up. Drain excess fat.
Add taco seasoning and 1/4 cup water to the beef. Simmer until sauce thickens, about 3 minutes.
Warm black beans and corn separately in microwave or small pan.
Assemble bowls: divide cilantro lime rice among 4 bowls. Top with seasoned beef, black beans, corn, tomatoes, avocado, sour cream, and cheese.
Serve immediately with lime wedges if desired.
Tips
For a lighter version, use ground turkey or chicken.
