Ingredients
- 2 T-bone steaks, about 1 inch thick (each 12-16 oz)
- 1 tablespoon kosher salt
- 1 teaspoon black pepper
- 2 tablespoons vegetable oil
- 2 tablespoons unsalted butter
- 2 cloves garlic, smashed
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
Instructions
- Remove steaks from refrigerator 30 minutes before cooking. Pat dry with paper towels and season generously with salt and pepper on both sides.
- Heat a large cast-iron skillet over high heat until smoking. Add vegetable oil and swirl to coat.
- Carefully place steaks in skillet. Sear without moving for 4 minutes for medium-rare, or until a deep brown crust forms.
- Flip steaks and add butter, garlic, rosemary, and thyme to the pan. Tilt pan and baste steaks with melted butter for 2 minutes.
- Cook to desired doneness: 130°F internal for medium-rare (about 2 more minutes). Remove from heat and let rest 5 minutes before serving.
- Slice steak off the bone and serve with pan juices.
