Ingredients
1/2 cup short-grain white rice
2 cups whole milk
1/4 cup honey
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
Pinch of salt
1/2 cup raisins (optional)
Instructions
In a medium saucepan, combine rice, milk, honey, cinnamon, and salt. Bring to a boil over medium heat, stirring occasionally.
Reduce heat to low, cover, and simmer for 20 minutes, stirring every 5 minutes to prevent sticking.
Remove from heat. Stir in vanilla extract and raisins (if using). Let stand covered for 5 minutes.
Serve warm, topped with additional milk or cream if desired.
Tips
For a creamier pudding, use whole milk or add a splash of heavy cream at the end.
Store leftovers in the refrigerator for up to 3 days. Reheat with a little milk to restore creaminess.
Top with fresh fruit, nuts, or a drizzle of maple syrup for extra flavor.
