Ingredients
- 8 cups popped popcorn (from about 1/2 cup kernels)
- 1 cup mini pretzels
- 1 cup salted peanuts (or mixed nuts)
- 1/2 cup unsalted butter
- 1/2 cup packed light brown sugar
- 1/4 cup light corn syrup
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 250°F (120°C). Line a large baking sheet with parchment paper or a silicone mat.
- Place popcorn, pretzels, and peanuts in a large bowl; set aside.
- In a medium saucepan over medium heat, combine butter, brown sugar, corn syrup, and salt. Stir until butter is melted and mixture is smooth.
- Bring to a boil, then let boil without stirring for 4 minutes. Remove from heat and stir in baking soda and vanilla (mixture will foam).
- Pour caramel over popcorn mixture and toss quickly with a spatula until evenly coated.
- Spread mixture onto prepared baking sheet in an even layer. Bake for 15 minutes, stirring halfway through.
- Remove from oven and let cool completely on baking sheet. Break into clusters and serve.
Tips
- Store in an airtight container at room temperature for up to 1 week.
- For extra crunch, add 1/2 cup roasted almonds or cashews.
- If caramel hardens before tossing, microwave the bowl for 10-15 seconds to soften.
