Ingredients
1 large sweet potato (about 12 oz)
1 tablespoon olive oil
1/4 teaspoon salt
4 tablespoons almond butter
1 medium banana, sliced
1 tablespoon honey or maple syrup (optional)
1/4 teaspoon cinnamon (optional)
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Wash and dry the sweet potato. Slice lengthwise into 1/4-inch thick planks (about 4 slices).
Brush both sides of each slice with olive oil and sprinkle with salt. Place on prepared baking sheet.
Bake for 20-25 minutes, flipping halfway, until tender and lightly browned on edges.
Let slices cool slightly. Spread each slice with 1 tablespoon almond butter.
Top with banana slices. Drizzle with honey or maple syrup and sprinkle with cinnamon if desired. Serve immediately.
