Ingredients
2 large sweet potatoes (about 1.5 lbs)
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
1/2 cup mayonnaise
1 chipotle pepper in adobo sauce, minced
1 teaspoon adobo sauce (from the can)
1 clove garlic, minced
1 tablespoon lime juice
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Peel sweet potatoes and cut into 1/4-inch thick sticks.
In a large bowl, toss sweet potato sticks with olive oil, salt, pepper, and smoked paprika until evenly coated.
Spread fries in a single layer on the prepared baking sheet. Bake for 15 minutes, then flip and bake for another 10-15 minutes until golden and crispy.
While fries bake, make the aioli: In a small bowl, combine mayonnaise, minced chipotle, adobo sauce, garlic, and lime juice. Mix well.
Serve fries hot with chipotle aioli on the side for dipping.
Tips
For extra crispiness, soak cut fries in cold water for 30 minutes, then dry thoroughly before tossing with oil.
Aioli can be made up to 2 days ahead and refrigerated.
