Ingredients
- 1 cup dried ginkgo nuts (or 1½ cups canned, drained)
- 4 cups water
- 1/2 cup rock sugar (or granulated sugar, adjust to taste)
- 2 tablespoons goji berries (optional)
- 1 tablespoon dried osmanthus flowers (optional, or 1 teaspoon vanilla extract)
Instructions
- If using dried ginkgo nuts, soak them in water for 2 hours or overnight. Drain and rinse. If using canned, simply drain and rinse.
- Bring 4 cups of water to a boil in a medium saucepan. Add the ginkgo nuts and reduce heat to low. Simmer for 20 minutes until tender.
- Add rock sugar and stir until dissolved. Simmer for another 5 minutes.
- Add goji berries and osmanthus flowers (if using). Simmer for 2 more minutes. Remove from heat.
- Serve warm or chilled. The dessert can be stored in the refrigerator for up to 3 days.
Tips
- For a richer flavor, replace half the water with coconut milk.
- Ginkgo nuts are also known as white nuts or silver apricot nuts. Do not eat raw as they contain toxins.
- This dessert can be served as a soup or with tapioca pearls for texture.
