Ingredients
1/2 cup white sugar
1/3 cup rice vinegar
1/4 cup water
2 tablespoons ketchup
1 tablespoon soy sauce
1 tablespoon cornstarch
1/4 cup pineapple juice (from canned pineapple)
Instructions
In a small bowl, mix cornstarch with 2 tablespoons of water to make a slurry. Set aside.
In a small saucepan, combine sugar, rice vinegar, remaining water, ketchup, soy sauce, and pineapple juice. Whisk over medium heat until sugar dissolves.
Bring the mixture to a gentle boil, then reduce heat to low. Slowly stir in the cornstarch slurry while whisking continuously.
Cook for 1-2 minutes until the sauce thickens to a syrupy consistency. Remove from heat.
Let cool completely before serving. Sauce will thicken further as it cools.
Tips
Store in an airtight container in the refrigerator for up to 2 weeks.
For a thicker sauce, add an extra teaspoon of cornstarch mixed with water.
Adjust sweetness by adding more or less sugar to taste.
