Ingredients
1 lb ground pork
1/2 cup breadcrumbs
1 large egg
2 cloves garlic, minced
1 tsp ginger, grated
2 tbsp soy sauce
1/4 cup all-purpose flour
2 tbsp vegetable oil
1/2 cup ketchup
1/4 cup rice vinegar
1/4 cup brown sugar
1 tbsp cornstarch
1/2 cup pineapple juice
1/2 cup pineapple chunks
1 green bell pepper, chopped
Instructions
In a bowl, combine ground pork, breadcrumbs, egg, garlic, ginger, and 1 tbsp soy sauce. Mix well and form into 1-inch meatballs.
Roll meatballs in flour to coat lightly. Heat oil in a skillet over medium heat and brown meatballs on all sides, about 5 minutes. Remove and set aside.
In the same skillet, whisk together ketchup, rice vinegar, brown sugar, cornstarch, pineapple juice, and remaining 1 tbsp soy sauce. Bring to a simmer.
Add pineapple chunks and green bell pepper. Return meatballs to the skillet. Simmer for 10-15 minutes until meatballs are cooked through and sauce thickens.
Serve over rice or as an appetizer with toothpicks.
Tips
For a healthier version, bake meatballs at 400°F for 15 minutes instead of frying.
Leftovers can be stored in the refrigerator for up to 3 days.
