Ingredients
8 cups air-popped popcorn (from about 1/3 cup kernels)
1 cup salted peanuts
1 cup mini pretzel twists
1/2 cup unsalted butter
1/2 cup packed light brown sugar
1/4 cup light corn syrup
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla extract
Instructions
Preheat oven to 250°F. Line a large rimmed baking sheet with parchment paper.
In a large bowl, combine popcorn, peanuts, and pretzels. Set aside.
In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup, and salt. Bring to a boil, stirring constantly. Boil for 4 minutes without stirring.
Remove from heat. Stir in baking soda and vanilla (mixture will foam). Immediately pour over popcorn mixture and toss gently to coat.
Spread mixture onto prepared baking sheet in an even layer.
Bake for 10 minutes, stirring halfway through. Let cool completely on baking sheet (it will crisp as it cools).
Break into clusters. Store in an airtight container at room temperature for up to 1 week.
Tips
For extra crunch, add 1/2 cup toasted coconut flakes or 1/2 cup chocolate chips after baking.
If you don't have corn syrup, substitute with honey or maple syrup (the texture may be slightly different).
Popcorn can be made in an air popper or on the stovetop. Avoid microwave popcorn with added butter or salt.
