  2. Meanwhile, parboil potatoes in salted water for 10 minutes, drain, and shake in the colander to fluff. Toss with olive oil, salt, and pepper. Spread in a separate roasting tin and roast at 180°C for 45-60 minutes, turning halfway.
  3. Toss carrots and parsnips with olive oil, salt, and pepper. Add to the potato tin for the last 30 minutes of cooking.
  4. For gravy: After removing beef, place the roasting tin on the hob. Skim off excess fat, leaving about 2 tbsp. Whisk in flour and cook for 1 minute. Gradually add beef stock, Worcestershire sauce, and thyme. Simmer, scraping up browned bits, until thickened. Season to taste.
  5. Warm Yorkshire puddings according to package directions.
  6. Slice the beef and serve with potatoes, vegetables, Yorkshire puddings, and gravy.
