Ingredients
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup unsalted butter, softened
- 1 1/2 cups white sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract (optional)
- 3 tablespoons granulated sugar for rolling
Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and baking powder. Set aside.
- In a large bowl, beat butter and 1 1/2 cups sugar until light and fluffy, about 3 minutes.
- Add egg, vanilla extract, and almond extract (if using); beat until combined.
- Gradually add flour mixture to butter mixture, mixing until just combined. Do not overmix.
- Place remaining 3 tablespoons sugar in a small bowl. Roll dough into 1-inch balls, then roll each ball in sugar to coat.
- Place balls 2 inches apart on prepared baking sheets. Flatten slightly with the bottom of a glass or your hand.
- Bake for 8-10 minutes, until edges are lightly golden. Centers will be soft.
- Cool on baking sheet for 2 minutes, then transfer to wire racks to cool completely.
Tips
- For extra soft cookies, reduce baking time by 1 minute.
- Store in an airtight container at room temperature for up to 1 week.
- Decorate with royal icing or sprinkles after cooling.
