Ingredients
1 cup whole milk, warm (110°F)
1 packet (2 1/4 tsp) active dry yeast
1/4 cup granulated sugar
2 large eggs, room temperature
1/4 cup unsalted butter, melted and cooled
1 tsp vanilla extract
1/2 tsp salt
3 1/2 cups all-purpose flour, plus more for dusting
Vegetable oil, for frying
1 cup granulated sugar
2 tsp ground cinnamon
Instructions
In a small bowl, combine warm milk, yeast, and 1 tablespoon of the sugar. Let stand until foamy, about 5 minutes.
In a large bowl, whisk together remaining sugar, eggs, melted butter, vanilla, and salt. Add yeast mixture and stir. Gradually add flour, mixing until a soft dough forms.
Turn dough onto a floured surface and knead until smooth and elastic, about 5 minutes. Place in a greased bowl, cover, and let rise until doubled, about 1 hour.
Punch down dough and roll out to 1/2-inch thickness on a floured surface. Cut out doughnuts using a 3-inch doughnut cutter or a round cutter and a smaller cutter for holes. Reroll scraps and cut again.
Place doughnuts on a floured baking sheet, cover, and let rise until puffy, about 30 minutes.
Heat 2 inches of oil in a deep pot to 350°F. Fry doughnuts in batches, about 1 minute per side, until golden brown. Drain on paper towels.
Mix sugar and cinnamon in a shallow bowl. While doughnuts are still warm, toss in cinnamon sugar to coat.
Tips
For best results, use a thermometer to maintain oil temperature.
Doughnuts are best eaten the same day.
If you don't have a doughnut cutter, use a glass and a bottle cap.
