Ingredients
1 lb pizza dough, room temperature
8 mozzarella string cheese sticks
1 tbsp olive oil
1/2 lb Italian sausage, casing removed
1/2 cup ricotta cheese
1 cup shredded mozzarella
1/4 cup grated Parmesan
1/2 cup pizza sauce, plus more for dipping
1 tsp dried oregano
1/2 tsp garlic powder
1 egg, beaten (for wash)
1 tbsp sesame seeds (optional)
Instructions
Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a skillet over medium heat, cook Italian sausage until browned, breaking it into crumbles. Drain excess fat and let cool slightly.
In a bowl, combine cooked sausage, ricotta, shredded mozzarella, Parmesan, 1/4 cup pizza sauce, oregano, and garlic powder. Mix well.
Divide pizza dough into 4 equal pieces. On a lightly floured surface, roll each piece into an 8-inch circle.
Place 2 mozzarella string cheese sticks end-to-end around the edge of each dough circle, leaving a 1/2-inch border. Fold the edge of the dough over the cheese and press to seal, creating a stuffed crust.
Spoon about 1/2 cup of the filling onto one half of each dough circle, leaving a 1-inch border. Fold the other half over the filling and crimp edges with a fork to seal.
Brush each calzone with beaten egg and sprinkle with sesame seeds if desired. Cut 2-3 small slits on top for steam vents.
Bake for 20-25 minutes until golden brown. Let rest 5 minutes before serving with warm pizza sauce for dipping.
Tips
For a vegetarian version, substitute sausage with sautéed mushrooms and spinach.
Leftover calzones can be refrigerated and reheated in a 350°F oven for 10 minutes.
Serve with extra pizza sauce or marinara on the side.
