Ingredients
1 lb beef sirloin, thinly sliced into strips
2 tbsp all-purpose flour
1 tsp salt
1/2 tsp black pepper
2 tbsp unsalted butter
1 tbsp olive oil
1 large onion, thinly sliced
8 oz mushrooms, sliced
2 cloves garlic, minced
1 cup beef broth
1 tbsp Worcestershire sauce
1 tsp Dijon mustard
1/2 cup sour cream
1 tbsp fresh parsley, chopped (for garnish)
8 oz egg noodles, cooked according to package directions
Instructions
In a bowl, toss beef strips with flour, salt, and pepper until coated.
Heat butter and olive oil in a large skillet over medium-high heat. Add beef in a single layer and cook until browned, about 2 minutes per side. Transfer to a plate.
In the same skillet, add onion and cook until softened, about 3 minutes. Add mushrooms and cook until golden, about 5 minutes. Add garlic and cook 1 minute.
Pour in beef broth, Worcestershire sauce, and mustard. Stir, scraping up browned bits. Bring to a simmer and cook until slightly thickened, about 3 minutes.
Reduce heat to low. Stir in sour cream until smooth. Return beef and any juices to the skillet. Simmer gently for 2 minutes, without boiling.
Serve over cooked egg noodles, garnished with parsley.
Tips
For a richer sauce, use heavy cream instead of sour cream.
Serve with mashed potatoes or rice instead of noodles.
To prevent sour cream from curdling, make sure the sauce is not boiling when you add it.
