Ingredients
1 cup jasmine rice
1 lb ground beef or pork
2 tbsp soy sauce
1 tbsp brown sugar
1 tsp sesame oil
2 cloves garlic, minced
1 tsp grated ginger
1/2 cup shredded carrots
1/2 cup cucumber, diced
1/4 cup chopped green onions
2 tbsp rice vinegar
1 tbsp sriracha (or to taste)

1 tbsp sesame seeds
Instructions
Cook rice according to package directions; keep warm.
In a bowl, mix soy sauce, brown sugar, sesame oil, garlic, and ginger. Add ground meat and mix well.
Heat a skillet over medium-high heat. Cook meat mixture, breaking it up, until browned and cooked through, about 8 minutes.
In a small bowl, whisk together rice vinegar, sriracha, and mayonnaise to make the sauce.
Assemble bowls: divide rice among bowls, top with meat, carrots, cucumber, and green onions. Drizzle with sauce and sprinkle sesame seeds.
Tips
Substitute ground chicken or tofu for a lighter option.
Add a fried egg on top for extra richness.
