Ingredients
2 cups fresh or frozen strawberries, hulled and halved
1/4 cup granulated sugar
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thicker sauce)
Instructions
In a medium saucepan, combine strawberries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until strawberries release their juices and mixture comes to a simmer, about 5 minutes.
Reduce heat to low and let simmer for 5-7 minutes, stirring occasionally, until strawberries are soft and sauce has slightly thickened.
If desired, for a thicker sauce, stir in cornstarch slurry and cook for 1-2 more minutes until thickened.
Remove from heat and stir in vanilla extract. Let cool slightly before serving. Sauce will thicken as it cools.
Tips
For a smoother sauce, blend with an immersion blender or in a regular blender after cooking.
Store leftover sauce in an airtight container in the refrigerator for up to 1 week.
Serve warm or at room temperature over pancakes, waffles, French toast, or ice cream.
