Ingredients
1 pound fresh strawberries, hulled and quartered
1 cup granulated sugar
1 cup fresh lemon juice (from about 6 lemons)
1 cup water
1 tablespoon lemon zest (optional)
Instructions
In a medium saucepan, combine strawberries, sugar, and water. Bring to a boil over medium-high heat, stirring occasionally.
Reduce heat to low and simmer for 10 minutes, mashing strawberries occasionally with a potato masher or fork.
Strain the mixture through a fine-mesh sieve into a bowl, pressing on solids to extract as much liquid as possible. Discard solids.
Stir in the fresh lemon juice and lemon zest (if using). Let cool completely.
Transfer to a jar or bottle and refrigerate until ready to use. To serve, mix 2 tablespoons concentrate with 1 cup cold water or sparkling water and ice.
Tips
Store concentrate in the refrigerator for up to 2 weeks or freeze for up to 3 months.
For a sweeter lemonade, add more sugar to taste when mixing.
Use leftover strawberry pulp in smoothies or yogurt.
