Ingredients
1 lb (450g) fresh strawberries, hulled
1/3 cup (65g) granulated sugar, plus more to taste
1 tablespoon lemon juice
1 cup (240ml) heavy cream
1/2 teaspoon vanilla extract
Instructions
Set aside 4 small strawberries for garnish. Slice the remaining strawberries and place in a bowl. Add sugar and lemon juice, then mash with a fork or potato masher to a chunky purée. Let stand for 10 minutes to macerate.
In a large bowl, whip the heavy cream and vanilla extract until soft peaks form. Be careful not to overwhip.
Gently fold the strawberry mixture into the whipped cream until just combined, leaving some streaks for a marbled effect.
Divide the fool among 4 serving glasses or bowls. Garnish each with a reserved strawberry. Serve immediately, or refrigerate for up to 2 hours before serving.
Tips
For a smoother texture, purée half the strawberries in a blender and fold in the remaining sliced ones.
If strawberries are not very sweet, add extra sugar to taste.
This dessert is best served the same day, but leftovers can be refrigerated for up to 24 hours.
