Ingredients
4 medium leeks (white and light green parts only)
2 tablespoons vegetable oil
4 cloves garlic, thinly sliced
1 tablespoon fresh ginger, julienned
1 tablespoon soy sauce
1 teaspoon sesame oil
1/4 teaspoon white pepper
1/4 teaspoon salt (or to taste)
Instructions
Trim the leeks, removing the dark green tops and root ends. Slice lengthwise, then rinse thoroughly under cold water to remove any grit. Cut into 2-inch matchsticks.
Heat vegetable oil in a wok or large skillet over high heat until shimmering.
Add garlic and ginger; stir-fry for 15 seconds until fragrant.
Add leeks and stir-fry for 2-3 minutes until just tender but still crisp.
Drizzle soy sauce and sesame oil over the leeks, then add white pepper and salt. Toss to combine, about 30 seconds.
Remove from heat and serve immediately.
Tips
For extra heat, add a pinch of red pepper flakes with the garlic and ginger.
