Ingredients
1 lb fresh green beans, trimmed
2 tbsp vegetable oil
3 cloves garlic, minced
1 tsp fresh ginger, minced
2 tbsp soy sauce
1 tsp sesame oil
1/4 tsp red pepper flakes (optional)
1 tbsp toasted sesame seeds (optional)
Instructions
Bring a large pot of salted water to a boil. Add green beans and blanch for 2 minutes. Drain and immediately transfer to a bowl of ice water to stop cooking. Drain well and pat dry.
Heat vegetable oil in a wok or large skillet over high heat until shimmering. Add garlic and ginger; stir-fry for 15 seconds until fragrant.
Add green beans and stir-fry for 3-4 minutes, until they are crisp-tender and slightly charred in spots.
Add soy sauce, sesame oil, and red pepper flakes (if using). Toss to coat and cook for another 30 seconds.
Transfer to a serving dish and sprinkle with sesame seeds if desired. Serve immediately.
Tips
For extra crunch, use a mix of green and yellow wax beans.
Leftovers can be stored in an airtight container in the refrigerator for up to 2 days; reheat in a hot skillet.
To make it a main dish, add cooked chicken, beef, or tofu.
