Ingredients
1 lb Basella (Malabar spinach), leaves and tender stems
4 cloves garlic, thinly sliced
1-2 dried red chilies, broken (optional)
2 tablespoons vegetable oil
1/2 teaspoon salt
1/4 teaspoon sugar
Instructions
Wash the Basella thoroughly and drain. Cut into 2-inch pieces if large.
Heat a wok or large skillet over high heat until smoking. Add oil and swirl to coat.
Add garlic and dried chilies (if using). Stir-fry for 10 seconds until fragrant.
Add Basella and stir-fry vigorously for 1-2 minutes until wilted but still bright green.
Sprinkle salt and sugar, toss to combine, then transfer to a plate. Serve immediately.
Tips
Do not overcook; Basella becomes slimy if cooked too long.
