Ingredients

- 1 pound fresh green beans, trimmed and cut into 2-inch pieces
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1/2 cup vegetable broth or water
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Heat olive oil in a large skillet or pot over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Stir in green beans, diced tomatoes, broth, smoked paprika, salt, and pepper. Bring to a simmer.
- Reduce heat to low, cover, and cook for 15-20 minutes until beans are tender, stirring occasionally.
- Uncover and cook for an additional 5 minutes to thicken the sauce if desired. Garnish with parsley before serving.
