Ingredients
1 lb (450g) sirloin steak, about 1 inch thick
1 large head romaine lettuce, chopped
1/2 cup shaved Parmesan cheese
1 cup croutons
2 tbsp olive oil
Salt and black pepper to taste
For the dressing:
1/2 cup mayonnaise
2 tbsp lemon juice
1 tsp Dijon mustard
1 tsp Worcestershire sauce
1 clove garlic, minced
1/4 cup grated Parmesan cheese
2 tbsp olive oil
Salt and black pepper to taste
Instructions
Season steak generously with salt and pepper. Heat 1 tbsp olive oil in a cast-iron skillet over high heat until smoking. Sear steak for 4-5 minutes per side for medium-rare, or to desired doneness. Let rest for 5 minutes, then slice against the grain.
While steak rests, make dressing: In a bowl, whisk together mayonnaise, lemon juice, Dijon, Worcestershire, garlic, and grated Parmesan. Slowly whisk in 2 tbsp olive oil until emulsified. Season with salt and pepper.
In a large bowl, toss chopped romaine with dressing until evenly coated. Divide onto plates.
Top salad with sliced steak, shaved Parmesan, and croutons. Serve immediately.

For best results, let steak come to room temperature before cooking.
