Ingredients
8 cups fresh baby spinach
6 slices bacon, chopped
1/4 cup red onion, thinly sliced
2 hard-boiled eggs, sliced
1/4 cup white wine vinegar
1 tablespoon Dijon mustard
1 teaspoon sugar
Salt and freshly ground black pepper to taste
Instructions
Place spinach in a large salad bowl. Top with sliced red onion and hard-boiled eggs.
Cook bacon in a skillet over medium heat until crisp. Remove bacon with a slotted spoon and set aside, reserving about 2 tablespoons of drippings in the skillet.
Add vinegar, mustard, and sugar to the skillet with the bacon drippings. Whisk over medium heat until warm and combined. Season with salt and pepper.
Pour warm dressing over the spinach mixture. Add the reserved bacon and toss gently until spinach is slightly wilted.
Serve immediately.
Tips
For a lighter version, substitute turkey bacon and reduce drippings to 1 tablespoon.
Add sliced mushrooms or cherry tomatoes for extra flavor.
Serve as a main dish with crusty bread.
Leftovers are not recommended as the spinach will continue to wilt.
